Grain Free Seeded Crackers

I really struggle to find tasty gluten-free crackers and bread so when I made these deliciously crunchy and healthy grain free seeded crackers I was hooked. I’m now cooking double batches every few days. These seed crackers are to die for.

INGREDIENTS

  • 75gm sunflower seeds
  • 40gm pepitas
  • 50gm besan flour
  • 35gm sesame seeds
  • 2 tbsp flaxseeds
  • 1 tbsp chia seeds
  • 1 tbsp chopped thyme leaves
  • 1/2 tsp celtic sea salt
  • 1 organic egg
  • 1 tbsp butter or coconut oil, melted

METHOD

  • Preheat the oven to 180 degrees celsius
  • Place the sunflower seeds and pepitas in a food prcoessor and pulse until roughly chopped
  • Transfer to a bowl
  • Add the besan flour, sesame seeds, flaxseeds, chia seeds, thyme and salt
  • Add the egg and butter or coconut oil and using your hands mix until sticky place the dough between two sheets of baking paper and roll out the dough to 3mm thick.
  • Remove the top layer of baking paper and use a sharp knife to score the dough into bite size squares
  • Slide the sheet onto a baking tray and bake for 13-15 minutes or until just becoming golden in colour and cooked through
  • Allow to cool and store in an airtight container
