Foods high in Salicylates, Amines and Glutamates

There is a rise in food chemical intolerance. There are many symptoms, including skin reactions, reddening skin and eyes, sleeping disorders, behavioral changes, bedwetting, and other symptoms.

These are the most recent and up-to-date food chemical charts from the Royal Prince Alfred Hospital’s Allergy Unit (RPAH) in Sydney, Australia. The RPAH is the world’s leading unit for food chemical (salicylates, amines, glutamate, and food additives) intolerances.

The most recent list was updated in 2011. It is the result of both ongoing laboratory testing on the chemical content of food and years of clinical observation with thousands of patients.

This list of foods high in salicylates, amines, and glutamates was adapted directly from the RPAH Elimination Diet Handbook (2011). This is not a complete list. I recommend that you download the book. As the elimination diet is complex and requires experienced practitioners, I recommend that you only attempt it under the guidance of a qualified dietitian or naturopath.

  • Potato: Broiled white peeled (not a baby or new potatoes).
  • Lettuce: Iceberg (highly sensitive people discard outer dark green leaves)
  • Tinned or fresh bamboo shoots
  • Bean shoots: Made from mung beans. It must be very fresh because they rapidly develop amines through fermentation
  • Brussel sprouts: Fresh or frozen
  • Cabbage: Red, green (drumhead), Savoy, Wombok (Chinese)
  • Celery

  • Choko (Chayote pear)
  • Garlic: Very small quantities only

  • Mungbean sprouts
  • Shallot is also known as spring onions with a long green tail.
