My 8-year-old daughter and I have a tradition. Every Thursday afternoon, I pick my daughter up from school and take her to the Source bulk-foods store to try some delicious snacks. We were gifted this wonderful recipe last week, and I wanted to share it with all of you.
This makes for a tasty and nutritious snack. Skin-on almonds are good for beneficial bifidobacteria. The lucuma powder is a great addition to the mix.
Ingredients
- 1 1/4 cups nuts (I used almonds).
- 1/4 cup LSA
- 1/4 cup lucuma powder
- 1/4 cup coconut oil
- 1/4 cup almond butter
- 2 tbsp maple syrup
- 1/4 teaspoon cinnamon
- Pinch Himalayan salt
Method
- Step 1 Blend the nuts using a food processor or almond meal until they are a coarse meal.
- Step 2 Combine the ground nuts with LSA, lucuma and salt in a bowl. Mix well.
- Step 3 Heat the coconut oil, maple syrup, and almond butter in a saucepan.
- Step 4 Combine the dry and wet ingredients. Place the mixture in a loaf pan lined with baking parchment. Press down, and let cool for at least two hours.
- Step 5 Cut into squares or bars.
